In its preparation this rosolio uses the prickly pear, a fruit that grows spontaneously in the soils of the Mediterranean basin, but which in Sicily, among the "sciare", i.e. the volcanic rocks produced by the solidification of the lava flows, heated by the island's hot sun, find their their natural habitat and acquire an incomparable sweetness and aroma.
These prickly pears, stripped of their prickly peel and cut into small pieces, are infused in high quality alcohol with an artisanal procedure which preserves their aromas and fragrances.
The infusion is filtered and mixed with water and sugar to bring it to an alcohol content of 25%.
The liqueur has a dark red color when red-fleshed fruits are used, or yellow-orange if the fruits have yellow flesh. It is full-bodied and has a full flavor very similar to fruit. It is excellent to combine with typical Sicilian sweets with almonds and also with fresh cheeses.
