Carob honey is a type of monofloral honey, produced by bees that feed mainly on the nectar of carob flowers, a tree of the legume family found above all in the Mediterranean regions.
Carob honey has a dark amber color and an intense and sweet flavour, with caramel and slightly bitter notes. The texture is thick and creamy, thanks to the presence of a large amount of sugar in the carob nectar.
Carob honey is also appreciated for its nutritional and therapeutic properties, including the ability to help soothe coughs and sore throats, thanks to its anti-inflammatory and antibacterial properties. Furthermore, carob honey contains antioxidants and minerals such as iron, calcium and magnesium.
