VINIFICATION AND AGING
The different grape varieties are harvested and vinified separately.
The manual harvest begins in the early hours of the morning in order to preserve
the freshness and aromatic integrity of the bunches. In the cellar we proceed with
a destemming of the harvest, after which a short process begins
of maceration at low temperature. Subsequently we proceed to one
soft pressing and, after cold decantation, fermentation begins
alcoholic at controlled temperature. At the end of the alcoholic fermentation
the various batches of wine are left to mature in steel until ready
of the assembly. The second fermentation occurs by natural refermentation in
autoclave with the Martinotti-Charmat method.
ORGANOLEPTIC SHEET
In the glass it appears crystalline, with a pleasant straw yellow color
enriched by a subtle perlage. The aromas are fresh and fruity with pleasant
notes of Mediterranean scrub and aromatic herbs. The taste is fresh and
balanced, with a delicious lively note that gives liveliness and great drinkability.
COMBINATIONS
An eclectic wine in combination that can also accompany throughout the day
meal enhancing itself in combination with seafood dishes or flavours
generous with the native Sicilian rotisserie and the Italian pizzeria.
