This rosolio uses prickly pears in its preparation, a fruit that grows spontaneously in the soil of the Mediterranean basin, but which in Sicily, among the "sciare"—the volcanic rocks produced by the solidification of lava flows, warmed by the island's hot sun—find their natural habitat and acquire an unparalleled sweetness and aroma.
These prickly pears, stripped of their prickly peel and cut into small pieces, are infused in high-quality alcohol using an artisanal process that preserves their aromas and fragrances.
The infusion is filtered and mixed with water and sugar until it reaches an alcohol content of 25%.
The liqueur is dark red when red-fleshed fruits are used, or yellow-orange if yellow-fleshed fruits. It is full-bodied and has a full flavor very similar to the fruit. It pairs excellently with traditional Sicilian almond desserts and fresh cheeses.
