Peperonata is grandma's classic recipe, a side dish (or starter) based on peppers, tomatoes, onion and basil which, when cooked together, give life to a true symphony of flavours.
Colorful and super fragrant, peperonata is the queen of summer together with Parmigiana and Caponata. The original recipe is accompanied by some regional variations such as the Venetian, Neapolitan, Apulian and Sicilian ones.
The Sicilian version differs from all the others due to the addition of vinegar and sugar which give the peperonata an irresistible sweet and sour taste.
