Tuna lattume is a typical fish product used as an ingredient in cooking. Typical of Sicily, it is the male equivalent of bottarga.
It is obtained from the gonads and it is necessary to catch male fish during the breeding season. That is, it is necessary that the semen sacs are as full as possible; they are taken, cleaned, boiled in water and salt and then cooled.
At this point the lettuce is drained and stored in glass jars with olive oil. Its natural and genuine flavour, gives your dishes a Mediterranean touch.
Excellent for dressing hot or cold pasta-based first courses, but also for unique fish-based dishes and fresh salads.
