NERO D'AVOLA / DOC SICILIA
Absolute sovereign of the "Sicilian Vineyard", favorite son of his native land, the Black
d'Avola is the undisputed protagonist of the Riesino area which preserves the history and the best
vineyards intended for the cultivation of this vine. This wine is obtained from one area
of approximately two hectares which is located in the heart of the company in a difficult hilly area
reachable if not on foot. These characteristics allow us to create a unique wine
with an exclusive and particular character within a territory strongly suited to
the cultivation of this grape. The harvest is carried out late to obtain a
natural drying process of the berries which allows us to further enhance the
power and elegance that these precious grapes.

TRAINING / Espalier-trained vineyards with a density of vines per
hectare equal to 5.000. The average age of the vineyards is around 25 years.

VINIFICATION AND AGING
This wine is the result of a company zoning process. The bunches
slightly withered on the vine they come from a vineyard of approximately two hectares
on which a strict harvest selection is carried out. The grapes are destemmed
before being inoculated with selected yeasts. Alcoholic fermentation
is conducted at a temperature between 23 and 28° C. They come
numerous delestages and reassemblies were carried out to favor positive extraction
of tannins and color. After racking, the wine is left to mature
Wood. After bottling the wine ages for another 2-3 months before
be marketed.
ORGANOLEPTIC SHEET
The wine appears in the glass with an impenetrable ruby red color
great concentration and consistency. The characteristics emerge clearly
typical notes of the vine reminiscent of ripe red fruit and compote
of plum, enriched by pleasant spicy and toasted hints that confer
a great complexity to the olfactory picture. It is a powerful, elegant wine
and structured, with dense and smooth tannins. In the mouth it is broad and harmonious,
rightly tasty with a very long final persistence.
COMBINATIONS
He will celebrate a voluptuous union with a splendid loin of podolica,
lavishly sprinkled with new Nocellara oil, fresh black pepper
grinding and grains of coarse Marsala salt.
