Soil: The grapes come from the Castelvetrano area a few meters above sea level, rich in organic matter, it has a medium-textured structure tending towards sandy.
Harvest: Harvested exclusively by hand in early September. The grapes are harvested in the coolest hours of the day.
Vinification: The grapes are vinified in thermo-controlled steel tanks at 15°C. At the end of fermentation and after filtration, maturation continues in thermo-controlled steel tanks. Before bottling, the product undergoes a second refermentation in small autoclaves, using the Martinotti – Charmat method, in order to obtain a sparkling wine at a pressure of about 2 atmospheres.
