ETNA RED / DOC
Wine born from a mythical territory rich in history. The ash-soaked vineyards and soils
volcanic forged by the Giant's fire give us great grapes with an original character that
make this territory unique in the world. The low yield of the vineyards and the ancient varieties of
Nerello allow us to obtain a wine of great character and elegance.

GRAPE VARIETY / 80% Nerello Mascalese - 20% Nerello Cappuccio (Mantellato).
SOIL / Volcanic composed of sand generated by the weathering of
lava masses.

TRAINING / Old espalier-trained vineyards of approximately 25 years.

VINIFICATION AND AGING
This wine is obtained from the assembly of the two ancient varieties of Nerello
(90% Nerello Mascalese - 10% Nerello Cappuccio (Mantellato)). The grapes come
harvested by hand and placed in boxes to avoid crushing the berries.
Upon receipt in the cellar, the bunches are destemmed
followed by delicate pressing. Alcoholic fermentation is conducted
in steel at a temperature of 24-28°C. with a long permanence of the wine a
contact with the skins. Subsequently the wine matures in second barriques
and third passage for approximately 14 months followed by a period of refinement
bottle that is a prelude to marketing.
ORGANOLEPTIC SHEET
The wine appears in the glass with a pale ruby red color, typical of
variety with which it is produced. The bouquet is particularly rich and elegant with
notes of red fruit reminiscent of wild strawberries and raspberries, surrounded
by floral hints of violet which are enriched by subtle and pleasant aromas
spicy and toasted reminiscent of walnut husk, cinnamon, nutmeg,
tobacco leaves and cocoa beans. The particularly broad olfactory framework
and varied, it gives great opulence to the tasting that reveals a wine to us
warm and structured, very elegant, with ripe tannins and a typical minerality.
The finish reveals a great balance and a persistence that slowly unfolds
dissolves leaving a very pleasant aromatic return that takes us back to the notes
perceived by the nose.
COMBINATIONS
The recommended pairing is with important meat-based dishes.
